Actually, milk has a pH of around 6.5 to 6.7, which makes slightly acidic due to lactic acid. The pH of milk determines, milk is acidic or basic. However, The exact value of pH depends on many factors – such as

  • when the milk was produced.
  • how long it has been packaged or opened.
  • Which type of species.

The pH of Milk also Changes

The pH of milk changes over time. As milk goes sour, it becomes more acidic and the pH gets lower. This phenomenon is done due to the presence of a bacteria – Lactobacillus which convert the sugar( lactose ) into lactic acid. 

When milk is produced first time by the cow, its pH is lower because the presence of colostrum makes lower pH but when the cow has a problem with mastitis, then its pH goes higher or more basic.

Whole, evaporated milk is slightly more acidic than regular whole or skim milk.
