Climacteric fruits are those fruits, which continue to ripen after harvesting. Whereas Non-Climacteric fruits are those fruit, which does not ripen further after harvest. Most climacteric fruits are normally soft. Plant hormone ethylene gas is responsible for the ripening process. Climacteric fruits emit large amounts of ethylene gas due to which climacteric fruits continue to ripen even after harvesting. Non-Climacteric fruits also emit ethylene gas but in very less amount due to which Non-Climacteric fruits do not ripen further once harvested.
Examples of climacteric fruits – Apple, banana, mango, papaya, pear, apricot, peach, plum, avocado, guava, passion fruit, blueberry, cantaloupe, etc.
